Job Overview

Marriott Uganda is hiring a Cost Controller to join its finance and operations team in Kampala. This role sits at the intersection of inventory management, purchasing systems, and financial analysis within a luxury hospitality environment. As Cost Controller, you will be the eyes and ears of the finance team on the floor. You will perform physical counts, reconcile variances, and feed accurate data into the point of sale and purchasing platforms. Your work directly supports managers who plan menus, set prices, and forecast cost of sale ratios across the hotel.

Key Responsibilities

• Perform scheduled and surprise physical inventories for the food, beverage, and retail areas of the property.
• Run routine product mix, cost margin, and guest preference analyses to support merchandising and pricing decisions.
• Enter prices, menu changes, and user changes accurately into the point of sale and back office platforms.
• Record the receipt of food, beverage, and non food items in the inventory and purchasing modules daily.
• Investigate measurement unit issues and notable price variances, then escalate findings to the finance team.
• Update all inventory requisitions through the inventory and purchasing system in line with policy.
• Support the calculation of potential cost of sale ratios for outlet managers and the executive committee.
• Maintain master cost files, receipts, and supporting documentation to ensure audit readiness at all times.
• Conduct random spot checks to confirm all products are stored correctly, secured, and free from waste.
• Follow all Marriott policies on confidentiality, uniform, guest privacy, and protection of company assets.

Qualifications & Experience

Essential

• Bachelor’s degree in Accounting, Finance, Business Administration, or a related quantitative discipline.
• At least two years of experience in cost control, inventory, or purchasing within a hotel or food service setting.
• Strong working knowledge of point of sale systems, inventory modules, and purchasing software.
• Solid command of Microsoft Office, especially Excel for reconciliation, pivots, and variance reporting.
• High level of numerical accuracy combined with strong attention to detail under deadline pressure.
• Excellent written and verbal communication skills in English, with clear professional telephone etiquette.

Desirable

• Prior experience with Marriott systems, Opera, or other international hospitality finance platforms.
• Knowledge of Uganda tax requirements, import documentation, and supplier compliance standards.
• Familiarity with HACCP, food safety, and loss prevention procedures in a hotel back of house environment.
• Exposure to menu engineering, recipe costing, and standard portion control in a luxury hotel setting.
• Ability to lift and carry objects up to ten pounds without assistance during routine inventory counts.
