Job Overview
The Cost Controller role at Sheraton Hotel Kampala is a pivotal position within the hotel’s financial operations. This role ensures that all cost-related activities are managed efficiently and in accordance with Marriott’s established standards. The Cost Controller will work closely with the Food & Beverage team, inventory management, and other departments to maintain financial integrity and profitability. The Cost Controller will play a key role in sustaining the hotel’s financial health and operational efficiency.
Key Responsibilities
- Conduct monthly inventory and stock taking across all hotel stores to ensure accurate financial reporting.
- Perform spot checks on inventories in various stores at least twice each month to maintain stock accuracy.
- Develop recipe costing for new menus in collaboration with the Food & Beverage team and recommend optimal sales prices.
- Update existing recipes with current purchase prices whenever there are changes in supplier costs.
- Update the Material Control system with new beverage recipes to accurately deduct consumption from the Micros Symphony interface.
- Verify spoilage reports and recommend corrective actions to minimize waste and control costs.
- Conduct spot checks on short expiry items and coordinate with the Food & Beverage team for timely disposal or redistribution.
- Perform spot checks on Club Lounge beverage consumption and inventory to ensure proper usage and accountability.
- Conduct yield tests on meat and fish products with the Food & Beverage Kitchen team to optimize portion control and cost efficiency.
- Perform comprehensive costing analysis for all special events and advise management on profitability and pricing strategies.
- Prepare detailed monthly, quarterly, half-yearly, and yearly Food & Beverage revenue and cost analysis reports for executive review.
Qualifications & Experience
Essential
- Diploma or Bachelor’s degree in Accounting, Finance, Business Administration, or a related field from a recognized institution.
- Minimum of 2-3 years of relevant experience in cost control, inventory management, or financial analysis within the hospitality industry.
- Strong proficiency in Microsoft Office Suite, particularly Excel, and familiarity with Micros Symphony and Material Control systems.
- Excellent attention to detail, analytical skills, and ability to work independently while meeting tight deadlines.
- Strong communication skills in English, both written and verbal, with the ability to interact effectively with multiple departments.
Desirable
- Certification in Cost and Management Accounting (CIMA) or Certified Public Accountant (CPA) qualification.
- Experience working in a Marriott International property or similar international hotel brand.
- Knowledge of Ugandan tax regulations and hospitality industry standards.
- Previous experience using inventory management software and conducting yield tests in a kitchen environment.
