Job Overview
The Head Chef position at a prestigious hotel in Kampala, Uganda, reports directly to the Food & Beverage Manager and holds overall responsibility for the culinary department, ensuring that every dish served meets the establishment’s exacting standards for taste, presentation, and nutritional value.
As the culinary leader, you will direct all kitchen activities, from menu conception and recipe development to daily production supervision, while managing a diverse team to achieve consistent excellence in food quality, cost efficiency, and guest satisfaction.
Your leadership will foster a culture of innovation, teamwork, and continuous improvement, driving menu creativity, staff development, and operational excellence that enhances the hotel’s reputation for outstanding dining experiences and contributes to long-term business growth and profitability.
Key Responsibilities
- Plan, develop, and update seasonal menus that align with hotel standards, guest preferences, food trends, and cost targets while using locally sourced Ugandan ingredients.
- Organize and supervise daily food production across all meal periods, ensuring timely preparation, consistent portioning, presentation, and strict adherence to standardized recipes and quality specifications.
- Lead, train, and motivate a multidisciplinary kitchen team of sous chefs, cooks, pastry chefs, and kitchen assistants, encouraging growth, teamwork, and high culinary standards.
- Monitor food quality, portion control, plating standards, and temperature compliance, conducting regular tastings, visual inspections, and feedback reviews to guarantee consistency and exceed guest expectations.
- Manage inventory levels, oversee procurement of fresh produce, meats, seafood, and dry goods, negotiate with suppliers, and implement waste reduction strategies to control food cost.
- Ensure compliance with health, safety, and sanitation regulations, maintain HACCP standards, conduct staff training on proper food handling, and oversee kitchen cleanliness and pest control.
- Collaborate with the Food & Beverage Manager on budgeting, forecasting, and cost control, using data to set targets that support profitability and maintain food quality.
- Handle guest feedback and special dietary requests, coordinating with restaurant and banquet teams to deliver personalized dining experiences that accommodate needs and enhance guest satisfaction.
Qualifications & Experience
Essential
- Diploma in Culinary Arts, Hospitality Management, or a related field from a recognized institution, demonstrating foundational knowledge of cooking techniques and kitchen operations.
- Minimum three years of progressive experience as a Sous Chef or Chef de Partie in a full-service hotel, upscale restaurant, or high-volume food service environment.
- Proven ability to plan menus, control food costs, manage inventory, and supervise kitchen staff while maintaining high standards of quality, hygiene, and guest satisfaction.
- Strong leadership skills with experience supervising and training multicultural kitchen teams, promoting teamwork, accountability, and continuous improvement in culinary performance.
- Excellent knowledge of Ugandan and international cuisines, food safety regulations, HACCP principles, and allergen management applicable to hospitality and catering operations.
- Effective communication abilities in English, both written and verbal, to liaise with management, suppliers, and service staff, ensuring clear instructions and smooth kitchen operations.
Desirable
- Bachelor’s degree in Culinary Arts, Food Science, or Hospitality Management, providing advanced theoretical knowledge and practical skills in menu development, nutrition, and kitchen management.
- Experience with banquet and conference catering, including large-scale event menu planning, execution, and coordination with service teams to ensure seamless guest experiences.
- Familiarity with modern kitchen equipment, automation tools, inventory management software, and digital ordering systems to improve operational efficiency and reduce manual workload.
- Knowledge of nutritional labeling, allergen management, special diet preparation, and dietary restriction handling for guests with specific health or lifestyle requirements.
- Participation in culinary competitions, workshops, or continuous professional development programs that demonstrate commitment to excellence, innovation, and staying current with industry trends.
- Basic financial acumen, including understanding of profit and loss statements, budgeting processes, and cost-control measures to support profitable kitchen operations.
